Pumpkin Curry Recipe from Croton-on-Hudson Farmers Market

October 24, 2014

Happy Friday from Nicole at Down to Earth Farmers Markets, the crew behind the Croton-on-Hudson Farmers Market.

Looking to Sunday, I wanted to share some updates from the market. It runs every Sunday, from now through November 23rdFind us in the municipal parking lot, right off the Route 9 exit.

The fall harvest is in full swing! The market has lots crisp, juicy apples, cauliflower, squash, greens, mushrooms, and MUCH more in the produce line-up. There is also fresh – never frozen – fish from American Pride Seafood, Wave Hill Breads, pickles, locally-sourced Italian foods from Trotta Foods, and quiches and more from Pika’s Farm Table.

This Sunday, we welcome musician Brian Vegh on the Celtic violin from 11 am to 1pm.

AND Bombay Emerald Chutney Company will be there with her amazing Indian specialties. To get ready for the market, she email me this recipe yesterday and I wanted to share it with you. Sounds deeeelish!

Pumpkin Curry with Cranberry Chutney and Ayurvedic Spices.

2 Tablespoons olive oil
1 small pumpkin, about 5″ in diameter, diced into small cubes
Bombay Emerald Cranberry Chutney
Bombay Emerald Ayurvedic spices
1/4 t fenugreek
1/4 t cumin
1 cup water

Heat the olive oil in a pan. Add 1/4 teaspoon of Fenugreek, 1/4 teaspoon of cumin to hot oil. Add pumpkin to it. Add 1/4 teaspoon of each of the following of our ayurvedic spices: turmeric, coriander powder, black salt (desired amount), gram masala. Add 1 cup of water and bring it to boil. Lower the heat and cook for 4 minutes or until pumpkin is tender to your taste. Add two/three table spoons full of our cranberry chutney or desired amount of chutney to the pumpkin and simmer it for one more minute. This is the most delicious pumpkin curry you will ever taste – that is what customers said after tasting pumpkin curry at the farmers’ markets. Note: Any of the five of our chutneys can be used to prepare this dish. Please adjust the amount of spices as needed for your taste. ENJOY!
